Homade Blureberry-Mint Popsicles

Store-bought popsicles often have high fructose corn syrup and artificial flavors. For a healthier option, try these Blueberry-Mint Popsicles made with only natural sweeteners. I hope you enjoy them as much as I do!
Blueberry-Mint Popsicles Recipe
I made these popsicles with local blueberries, fresh mint, and creamy Greek yogurt. You can follow this recipe or use it as a base to create your own frozen treats.
Ingredients:
10 ounces fresh blueberries (about 1 ¼ cups; use 1/3 cup water if using frozen blueberries)
½ cup water
2 tablespoons plus 1/3 cup sugar, divided
1 teaspoon lemon juice
Pinch of sea salt
2 sprigs fresh mint leaves
10 ounces full-fat Greek yogurt
Freeze Time
These popsicles need at least 4 to 6 hours to freeze completely. Freezing overnight is best and gives you something to look forward to the next day!
Creamy Popsicles
Adding yogurt for protein and probiotics makes these popsicles creamy and smooth. You can also use pureed bananas and juice for a soft texture. Unsweetened coconut milk adds creaminess and a hint of sweetness. Combining juice, whole fruit, and something creamy ensures a consistently smooth popsicle.
Freeze Time
These popsicles need at least 4 to 6 hours to freeze completely. Freezing overnight is best and gives you something to look forward to the next day!
Instructions:
In a medium saucepan, combine blueberries, water, 2 tablespoons sugar, lemon juice, and sea salt. Bring to a gentle simmer, add mint, and simmer on medium-low for 10 minutes, stirring often. Chill in the fridge for 20 minutes. Remove mint and any blueberry mixture from the leaves.
Puree the blueberry mixture in a blender or food processor. In a large bowl, mix the blueberry puree with the remaining 1/3 cup sugar and Greek yogurt. Spoon into popsicle molds and freeze for 4-6 hours or overnight.
To unmold, run the popsicle mold under lukewarm water.
Storage:
Keep popsicles well-sealed in the freezer for up to 3 weeks.
